Hainanese Chicken

Hainanese Chicken is very famous in Singapore, they have the best Hainanese chicken in the world.. I think =)

Cooking Hainanese chicken is very easy, you just have to boil the whole chicken in chicken stock with pandan, garlic and ginger until it's cooked then shock it in ice water to have a jelly-like skin texture. This was a tasty dinner =)

  2. bakit may balahibo? pagbili palang sa groceries wala ng balahibo dba? pero pag may balahibo, dip it in hot water then pluck the feathers....

    I did the shortcut version for the rice, para less hassle
    Please read the whole recipe before cooking so you can prepare everything na.

    Ingredients:
    1 whole chicken (massage for 10 – 15 mins esp. the breast part)
    Chicken stock (enough to cover the whole chicken and a little more for cooking the rice)
    5 slices Crushed garlic
    4 cloves Crushed ginger
    Pandan leaves (enough to fill cavities and to be used for the stock) The more the merrier =)
    Salt
    Pepper
    1 tbsp Sesame oil

    Ginger sauce:
    Ginger (1/4 cup)
    1 tbsp Garlic
    Salt
    Pepper
    Sesame oil 2 tsp
    Chicken stock 1 tsp

    1. Boil chicken stock, crushed garlic, crushed ginger, pandan leaves, sesame oil. Season with salt and pepper to taste. After massaging the chicken, season chicken with salt and fill the cavities with pandan leaves and drizzle with sesame oil.
    2. When the stock is boiling, dip the whole chicken holding on to the neck and starting with the legs first until everything is submerged. Cook for 45 mins to 1 hour.
    3. While chicken is cooking, cook the rice in the rice cooker. Substitute chicken stock used for boiling the chicken for water. Prepare ice with cold water in a bowl.
    4. When the chicken is cooked , plunge the whole chicken into the ice bath.
    5. Debone chicken and serve with the Hainanese rice, ginger sauce and the soup. Garnish with tomatoes, cucumber and spring onions if desired.

    Ginger sauce
    1. Blend ginger, garlic, and 1 tsp chicken stock. Season with salt and pepper to taste. Drizzle with sesame oil.
