Cream of Portobello Mushrooms and Piri Piri Chicken

Piri Piri Chicken is a native dish to Africans, particularly in Angola and Mozambique, which once were Portugese Colonies. Portugese adopted the recipe and now they are famous for it =)
*Piri Piri literally means chilies in African language


I'm excited to blog about my piri-piri creation. It was my first time to make piri piri chicken, and it turned out great.... the skin was crispy, meat was so tender and tasty and oils have all dripped off. It's a healthy chicken I can say. It is usually cooked barbeque style (charcoal grilling), I didn't have time to buy charcoal so I broiled it in the oven instead =) i just didn't have the smoky flavor but it was ok.

Stuffed Squid Teriyaki

Cooked stuffed squid using teriyaki sauce for a change. They liked it 'cause for the first time the squids were all gone.

I was trying out a new menu for Get Hooked.... shrimp poppers =) taste was good but the cost is a bit high.... tried cooking the shrimp whole and small bits.... I think bits are better

No, I didn't cook this.... but my dad did and this is my favorite.
This is one of my dad's specialties, Chili Beans =) And it's the best! No Bias.

I ate this for breakfast with my Cheese Hungarian Sausage, then for lunch with chicken and for dinner with just rice. mmmmmmm....m

salads

Had been making salads for dinner lately....

Last night we had this sweet and tangy Chinese Chicken Salad
don't have mandarin oranges so I used pineapple chunks instead



Tonight, we had this ... a salad that I've made up... I even made my own dressing =)
started with lemon, Dijon mustard, garlic, vinegar, rice wine....(I was grabbing whatever was in the cabinet =) ) emulsified it with olive oil, salt and pepper... it needed a little sweetness so I added honey ... and this dressing was perfect with my salad=)
maybe I can call it, Vin's Healthy Salad (because this is for him)



Joan for the Chinese Chicken Salad you'll be needing the ff...

lettuce
chicken, chunks or grilled chicken or shredded chicken, pwede din roasted chicken na himay himay
mandarin oranges
wonton wrappers, julienned (2.5x.5x.5) strips =) then deep fried OR sotanghon , deep fried
i used sotanghon kasi mas mabilis =) hehehe, but if you use wonton mas maganda ang color =)
SAUCE FOR CHINESE CHICKEN SALAD
3 tbsp soy sauce
1/3 cup rice wine vinegar
1 tsp. chopped garlic
1 tsp chopped ginger
2 tbsp veg. oil
1 1/2 tsp. sesame oil
2 tbsp brown sugar
1 1/2 tsp chili sauce (optional )

combine all ingredients in a jar with cover.... then shake it.... and its ready =)

For the other salad you'll be needing the ff...
DRESSING
1 1/2 TBSP lemon juice
1 tbsp mustard
1 tbsp honey
1/2 cup olive oil
salt pepper

in a bowl whisk together lemon, mustard and honey....drizzle small amount of olive oil at a time while whisking, to emulsify... when the dressing has reached its desired consistency then you can season to taste =) pwede mo rin add more honey if gs2 mong sweeter, if gs2 mo sour then add more lemon .. season again with salt and pepper

WING KINGS

I underestimated the hotness of their "SUPER HOT".... It was by far the hottest that I've tried.....
I've tried Buffalo Wings and Things, Hooter's, Charlie's Grill's, Gumbo's, Sunrise Bucket's Super Hot or Nuclear and this is the only one that made me ask for some water.

It was reasonably priced... Chicken didn't stay crispy, it wasn't crispy at all but taste was good =) liked their honey mustard dip also...wanted the cheezy bleu but it was already 86.

"Super Hot" Chicken Wings....hot sauce was made with siling labuyo... if you zoom in you'll see the chopped chili's

SAFARI CAKE

This marvelous Safari cake was created by Bam Gelano of Cakeworks, she has a store called Invitation House at Greenbelt5. It's at the basement 1 level, beside Picture Company and Gymboree.

HOOTERS

We have planned on visiting Hooters in Manila since it was opened. But we're not able to .... until last Saturday.

Hooters are known for its best selling Chicken wings, they are served either breaded or naked... then you get to choose on how HOT you want your wings to be.

They are also known for burgers, beers and girls ....
